I had a pretty uneventful food day today. I had cage free scrambled eggs with a salad for breakfast and some coffee with coconut milk. I wasn’t really hungry at lunch so I just decided to make an early dinner. We had Shrimp Scampi with salad and a side of fruit. I had a few Strawberries with mine.
To make the scampi I preheated the oven to BROIL! It warmed up my house on this cold day so that was an added bonus! Then I just filled a glass lasagna pan with a single layer of shrimp. I took half a red onion and three cloves of garlic and put them in my Ninja blender. No one in my house really likes onions, so if they are small and you don’t know it.. then the kids will eat it! lol. I spread the onion garlic mix over the top of the shrimp and then added some sprinkles of parsley, salt and pepper. I melt 1tsp of free range butter that is soy free and dairy free. Its made from flax seed and I think coconut milk. Anyways, pour that over the top and then add 4oz of white cooking wine.
Put it in the oven for 5 min, then flip shrimp and cook for 5 more minutes. Squeeze some lemon over the top when you are done and voila!
There is a recipe for shrimp scampi on the Caveman App that I have been using. But I had to make some alterations for my kids lol. This was soooooo good and I might have to make this every week from now on. God thing I’m full or I would be going back for more!
